It takes some adapting to be able to run triple option against today's defenses.  One of the best at teaching and running it is Bart Curtis, Head Coach, at Warsaw Community High School (IN).

In the video below, he goes through both diagrams and game film on how Warsaw runs triple against a 2-high safety count (both 4-3 and 3-4)  and against a 1-high safety (4-4).
